Home-cooked Meals I’ve Been Loving

As a foodie, I love going out to eat but what may come as a surprise to some is that I also really love to cook whenever I can! I try my best to have a healthy balance of meals out and at home. Here’s a fun round-up of some meals that I’ve recently cooked at home and enjoyed. If anything sounds tasty to you, I’ll also include the recipes that I used so that you can try them for yourself too.

Sweet-Spicy Korean Popcorn Chicken (FP)

During the busy weeks, I like to ensure I have some ready to cook meals on-hand so that if I don’t have a lot of time to prep and cook, I can still enjoy a meal at home. This is where Fresh Prep has come in handy! I really love their tasty and easy to follow recipes and especially enjoy their zero-waste kits where everything comes prepped and ready to cook (with the exception of a few items that may need a wash and chop). These kits are so user-friendly that even my husband – who isn’t much of the cook – can successfully whip up a meal!


Recently, I ordered the Sweet-Spicy Korean Popcorn Chicken. I honestly wasn’t expecting much but ended up really enjoying it and was surprised at how simple it was to create some Korean style chicken at home – the end result was a battered, spicy chicken that was cooked up in no time. My favourite part of the meal though had to be the soy potatoes, SO good that I’d consider making just the potatoes again.

Pan-Fried Chicken Flautas (FP)

I’m not sure if I’ve ever had this dish at a restaurant before but I tried flautas for the first time through Fresh Prep and loved it! Flautas are essentially a rolled up taco, it consists of a tortilla that is rolled and pan fried. I’ve tried both a meat and vegetarian friendly flauta recipes from FP and have enjoyed it both ways. I particularly loved the avocado crema that this week’s recipe had but the vegetarian version with halloumi that I tried another time was also a hit. Overall, no complaints for a meal that’s easy to throw together but still brings all the flavour. This is one recipe card that I will be keeping for myself as it seems easy to recreate on my own. Taiwanese Popcorn Chicken (Air Fryer)


I love fried chicken but I sometimes avoid making it at home because deep frying can create a mess in the kitchen. When I discovered this air fryer recipe, I was sold on the “healthier” alternative and how clean-up friendly it was. The end result was so delicious. All you need are some chicken thighs, potato starch, Thai basil and spices. The chicken was well-seasoned and actually quite crispy, despite it being air fried. While it’s a great snack on it’s own, I paired with rice and some veggies for a full meal! I will definitely keep this dish on our dinner rotations.

Beef Udon Stir-fry

When I’m feeling uninspired in the kitchen, a good udon dish never fails. Udon noodles are versatile but I think an udon stir-fry is also one of the best ways to use up ingredients in your fridge while having a well-rounded and filling meal. Recently, I had leftover mushrooms and beef. I paired the udon stir-fry with some aromatics and a simple soy sauce concoction and dinner was served. My creation was inspired by a combo of some recipes from Tiffy Cooks; she’s one of my fave recipe creators to follow online. Chilli Lime Steaks (FP)

Ok, last one for this post – Chilli Lime Steaks! With summer and grill season upon us, I thought this recipe from Fresh Prep was another good one to keep for future reference. It can easily be recreated with a grocery run of your own but the convenience of their delivery and zero waste kit can’t be beat! As the name describes, chilli lime is the prominent flavour in this dish and I really liked it since it was refreshing and gave a nice reminder of the summer flavours that I’ve been longing for! The corn salad was tangy & creamy, the potatoes were hearty and the steak was cooked perfectly by my hubby. Again – easy recipes for anyone.
